If you're eating Turkey anytime between yesterday and today, you're doing Thanksgiving wrong. Baked\roasted turkey is nasty as fuck. People tell me fried\smoked turkey is good, but I've never had it. But your standard Thanksgiving turkey is gross. There's a reason you have to smother it in gravy to make it even slightly palatable.

I do an amazing chicken dinner. I prefer it over Turkey and with a limited family/friend circle it's sized better.

I got a precooked turkey beast this year. Reheated in chicken broth with a little butter in it to 165f with Tyme and Oregano and some sea salt.

It was fanatics and it was the perfect size for our dinner, next day sammies with enough left over to make a couple homemade turkey pot pies.

Turkey is not that easy to cook is most people's problem.

A large bird takes so long to cook the white meat is going to be dry unless the prep was excellent.

Small bird, dry brine, the white meat comes out like deli turkey (without the lysteria.) You can still easily screw it up, especially if the cook is drinking.

We had an 11 pound turkey, it came out awesome.

mostly with ya, i'm not a turkey guy, prefer ham or prime rib

Turkey or chicken.... Stuff with some citrus, bake breast down 475 for 30 minutes, lower to 350. Last 30-40 minutes flip it breast up to brown.

Breast will cook slower and juices will settle into it.

Important to remember, you gotta pay for good meat. $3 PayPal ain't gonna cut it here. You can only elevate low quality ingredients so much (but you should still take the time to brine anyway, salt = flavor=life)
