Fuck around and found out about some chicken wings last night. Threw in some apple wood under neath the coals.

I've got a little brisket to try out. Never done one before. I think its just hardly over 1lb.
Any tips?

My pit boss control module took a dump. Kept tripping my GFCI for some reason and then the other day just didn't turn on at all. Amazon replacement in so we'll see if it works.

Dang. That looks perfect. How many lbs was the cut? What temp did you cook and for how long?
I have a small one I'm looking to do in the near future. Maybe even this coming up weekend.

It was small, ~11 pounds. Probably trimmed about 3+ of fat off.

260* for 7 hours. No wrap, spritzed with hard cider every 15-20 minutes the last few hours.

Decided to host a few friends and their kids for tacos, and being last minute I grabbed whatever was available from our local meat market.

300*F for about 2 hours, seasoned and drowned in beer & lime. Cooked to 198* internal.

Two roasts & some BIG chicken breast smoked with a variety of peppers and onions.

Turns out, you can throw just about any cut of beef in the smoker and it’s gonna be delicious.
