Fuck around and found out about some chicken wings last night. Threw in some apple wood under neath the coals.

Didn’t take a picture before going to work on it, but the 21 hours / no wrap getting it to 205F was well worth it.

Bone slid right out clean and the fat in the bowl to the right is all that didn’t render down

Tried out a Tri Tip tonight, nice easy alternative to Brisket. Smoked at 225F till 140 internal, then seared on the grill for a few minutes per side.

Next time I think I’ll let it go to 145~150ish (note to self).

I've got a little brisket to try out. Never done one before. I think its just hardly over 1lb.
Any tips?
